Last Minute Potato Salad. Fast and yummy with the added plus of having good probiotics!
This is the ultimate last minute salad! It tastes just as good warm as it does cold so there is no need to chill it if you don’t have time. If you cook the potatoes in a pressure cooker it’s even faster. Totally a winning recipe for any picnic or special occasion!
Another thing we love about this recipe is that we add great healthy probiotics to it without taking away any flavor! We do this with a little fermented sauerkraut juice and pickles. The brand we like best is Bubbies for our sauerkraut. You can use any that is fermented though. By using pickles that have been fermented you don’t lose any flavor but you add really good health. Just check your health food store for fermented pickles and sauerkraut.
Some of the reported benefits of probiotics are that they aid anxiety, help prevent infections, aid digestion, prevent cancer, increase weight loss, help with lactose intolerance and prevent eczema. Sounds like pretty good stuff to add into our diets right?
10-15 medium potatoes
6-8 boiled eggs
1 cup fermented pickles
½ cup fermented sauerkraut juice
1 ½ – 2 cups mayonnaise
1-2 Tbs. yellow mustard
2-3 Tbs. sugar
1 Tbs. salt
pepper to taste
Peal and dice potatoes and place in a pressure cooker. Cook as directed on your machine. If you don’t have a pressure cooker you can boil them on the stove top until tender.
In the mean time make your sauce by dicing onion and pickles and slicing boiled eggs. Add these and all other ingredients to a large mixing bowl. Stir together. When potatoes are tender add to sauce and enjoy!
