Potato Leek Soup

Easy Peasy Potato Leek Soup – Healthy comfort food at it’s finest!

Healthy comfort food is the best comfort food because it’s completely guilt free! This soup has so many good things in it. From the mushrooms (which Dr. Fuhrman says are anti-cancerous) to the dark green spinach, there is a lot of nutrition. The flavor is unbelievably good and of course very comforting.

Ingredients

¼ cup butter
1 chopped onion
3 chopped cloves garlic
2 sliced large leeks
2 cups chopped spinach (we chop our spinach fine to hide it from those who aren’t spinach lovers)
15-20 sliced large mushrooms
5 large cubed potatoes
8 oz. cooked bacon
2 tsp. minced onion
¼ tsp. garlic powder
1 tsp. onion powder
2 cups cream
salt and pepper to taste

Directions

Cook bacon and set aside. Add butter to bacon drippings and sauté onions and garlic until golden brown. Add leeks and spinach. Stir to mix well. Slice mushrooms and add to pan. Crumple bacon and combine all ingredients except cream in a large soup pan. Add only enough water to cover ingredients. Cook until potatoes are tender. Add cream and continue heating until warm.
