All the veggies are starting to come on in our garden! We crave this type of salad all year and it’s finally time to eat it! It’s super easy and fast to make. You have the basic base of garden fresh veggies and then two delicious dressing recipes to choose from. Both with great flavor and yummy herbs.

Summer Garden Salad (made two ways)

Veggie Salad Base

  • 10 – 15 Roma size tomatoes, diced
  • 2 cucumbers, diced
  • 2 cloves garlic, grated
  • ½ red onion, chopped
  • 2 bell peppers, chopped (any color, we used chocolate)

Place all ingredients in a salad bowl and stir gently.

Dill Dressing

Add all ingredients except cheese to a mason jar and shake well. Pour over salad base and stir gently. Top with cheese.

Basil Dressing

Add all ingredients except cheese to a mason jar and shake well. Pour over salad base and stir gently. Top with cheese.
