Who’s ready to start the New Year off right? It can be a little tricky to eat healthy during the cold months. However, if you have the right recipes on hand it’s not tricky at all! We love our Wilted Winter Salad, Winter Pomegranate Salad, and Cabbage Quinoa Winter Salad. Now, it’s time for a delightful Asian salad that you won’t ever forget!

Asian flavors are some of our very favorites and this salad really delivers. For an extra fun twist, we’ve made this salad completely vegetarian! The dressing is beyond amazing and when you combine it with the cilantro and sesame seeds you have a Heavenly dish. Not only does the Rice add flavor, texture, and fiber to this dish, it can also stabilize blood sugar levels, aid skin health, increase metabolism, aid digestion, reduce high blood pressure, protect against cancer, protect against heart disease and aid weight loss. (source)

Lettuce can have anti-inflammatory properties, aid bone health, lower risk of high blood pressure, lower risk of heart diseases, control anxiety, and induce sleep. (source)

Cabbage is good for your heart, can support digestion and help prevent cancer! It is also anti-inflammatory which is always a plus. (source)

Vegetarian Asian Salad

Remember to keep your ingredients organic for optimum nutrition!

Ingredients

  • rice (we like pink rice or forbidden rice)
  • lettuce, chopped
  • red cabbage, shredded
  • cucumbers, sliced
  • carrots, shredded
  • scallions, sliced
  • mandarin oranges
  • cilantro to garnish
  • sesame seeds to garnish

Directions

Starting with the rice as your base, layer each ingredient in the desired amounts.

    Salads are one of my favorite ways to make sure lunch stays healthy. And they are so easy to vary from day to day. I’ve never heard of pink rice before, either, so I can’t wait to check this out!
