Cinnamon Apple Enchiladas

Remember to keep your ingredients organic for optimum nutrition!

Ingredients

  • 3 apples, sliced
  • 1-2 Tbs. honey
  • 1 ½ tsp. cinnamon
  • whole wheat taco shells
  • ½ pint Buttermilk Syrup (recipe below)

Directions

Combine apples, honey, and cinnamon into a small saucepan. Cook slowly until the apples become slightly tender. Spread evenly into the taco shells (you should use around 3 large shells). Roll shells like an enchilada and place into a 7×11 cake pan. Drizzle Buttermilk Syrup over top and bake at 350º until lightly browned on top. Serve with vanilla ice cream if desired.

Directions

Put all Ingredients except vanilla in a saucepan and bring to a boil stirring constantly. Continue to stir and boil lightly for 7 minutes. It will begin to turn a beautiful golden brown. Remove from heat and stir in vanilla. Store what you don’t use in the refrigerator in a glass jar.
