Coconut Cacao Bars. Totally guilt free without sugar and packed with good grains, nuts and fats

 

Coconut oil is a healthy fat and has been called a beauty food… It also tastes pretty good! Three really good thoughts as we were putting together this recipe. These bars are completely guilt free and make a great treat or snack. After you’ve had one you’ll be craving more!

Coconut Cacao Bars

Crust:

Ingredients

  • 1 cup rolled oats
  • ½ cup finely chopped pecans, walnuts or cashews
  • 2 Tbs. soft coconut oil

Directions

Put oats in a blender and on the lowest speed whiz just long enough to barely chop (you don’t want it to be flour just a little chopped up). Combine all ingredients in a bowl and mix well. Press into bottom of an 8×8 pan and put into the refrigerator to chill.

Filling:

Ingredients

  • 2 cups coconut spread
  • ½ cup maple syrup
  • 2 tsp. vanilla
  • ½ cup coconut oil
  • 2 Tbs. cacao

Directions

Combine all ingredients except vanilla in a pan on lowest heat. Stir continuously and warm slowly and gently until completely melted and there are no lumps. Remove from heat and stir in vanilla. Pour over crust. Freeze or refrigerate until firm and serve!

For a vanilla version omit cacao and add 1 Tbs. vanilla. Or for a fun twist add a couple drops peppermint or orange essential oils. Make sure your oil is food grade though! We use Butterfly Express.
