Get ready for an entirely new pumpkin pie experience! It’s creamy, light, fluffy and only takes about 10 minutes to make!

We love cheesecake around here and pumpkin pie is, of course, a very traditional dessert. We decided to combine both and ended up with a divinely delicious pie that will certainly satisfy on Thanksgiving. The best part is that it can actually be good for you! Check out these awesome ingredients!

Pumpkins are a wonderful source of fiber which helps with weight loss. They also contain Vitamin A which aids eye health. Their Vitamin C can help boost the immune system and they may even help prevent cancer! (source)

Cinnamon contains both fiber and calcium which can protect against heart disease and help with colon health. Just the scent of cinnamon alone can boost brain function. It’s also anti-inflammatory and anti-microbial. (source)

Cardamom is a literal powerhouse of nutrition! It contains vitamin C and B6, manganese, magnesium, iron, and zinc. It can have health benefits such as helping to control cholesterol levels, aiding digestive health, improving heart health and it is anti-inflammatory. Not to mention it has fantastic flavor and is a natural sweetener! (source)

Organic Dairy can contain healthy fats that can help with heart health, brain health, healthy hormones and help you get fat soluble vitamins like A, D, E and K. (source)

With as much cooking as goes on at our house on Thanksgiving, we love recipes that can be made up beforehand (like our Whole Wheat Diggity Bomb Rolls and Sweet Potato Casserole with Bacon and Blue Cheese). This dish is perfect for just that! Make it up the day before and let it refrigerate until you are ready to dig in.

Using a Bosch or KitchenAid really helps make the cheesecake light and delightfully fluffy and the fact that it doesn’t need to be cooked is a total bonus. Let’s eat some cheesecake!

 

Healthy No Bake Pumpkin Cheesecake

Ingredients

Directions

In a Bosch or KitchenAid, combine all ingredients except whipping cream. Mix until smooth. Add whipping cream. Turn the mixer on low at first so the cream doesn’t splash. Increase the speed to high and beat until stiff. This will take 2-3 minutes. Pour into a prepared Graham Cracker Pie Crust and chill at least 4 hours or overnight.

Directions

We like a very crumbly pie crust,and that is what this is. In a small saucepan, melt butter, turn off heat and add honey to warm completely through. Crush the Graham Crackers finely. Mix all ingredients together and press into a pie dish. Chill at least 1 hour before adding pie filling.

Don’t forget to try our healthy versions of Banana Cream Pie and Chocolate Pie Squares. Both are made with pure ingredients and taste incredible!
