Only a little over a week until Christmas! This means last minute shopping, last minute visits from family and friends and last minute treats as you rush out the door to parties and fun.
Last year we shared our Last Minute Christmas Bark and it was such a success that we decided to add to the collection with these delightful Peanut Clusters. They are crunchy, salty, full of chocolate flavor and are a cinch to make!
The holidays can be a time when junk food is consumed in large quantities. Make sure to keep your ingredients organic and free of artificial ingredients for a truly guilt-free Christmas.

Last Minute Peanut Clusters
Remember to keep your ingredients organic for optimum nutrition!
- 1 Tbs. coconut oil
- 2 cups chocolate chips
- ¼ tsp. Real Salt
- 3 cups unsalted peanuts (you can also use cashews, hazelnuts, almonds, pecans, etc.)
Melt coconut oil and chocolate chips in a double boiler. When smooth, stir in salt and peanuts. Mix well. The mixture will be pretty soupy. Scoop and drop onto a cookie sheet lined with parchment paper. Chill until firm. If you are in a real hurry stick them in the freezer to firm up.
