You’ve heard of sugar cookies and you’ve heard of pumpkin cookies but have you heard of Pumpkin Sugar Cookies? Boy, are you in for a treat! With Halloween in only a few days, we wanted to get one more guilt-free treat in.
Now, you could take some Clean Eating Nutty Buddies or a little Clean Eating Caramel Apple Dip to the party, yet there is just something special about cookies. They are so easy to prepare and to take. You can cut these into whatever Halloween shape you like and their fun flavor is sure to catch attention. As long as you plan enough time to chill them you are set to go. We have even made them a day ahead of time and just let them chill a little longer. It really makes parties a breeze!
This is one of the very few recipes that we actually use sugar in. With healthy ingredients like coconut oil, whole wheat flour, pumpkin and cinnamon, we don’t feel there is much need to be concerned. As long as the sugar is organic, the other whole ingredients should help to keep blood sugar levels from spiking. It’s not a treat we would eat frequently but Halloween only comes once a year so we should be pretty safe 😉
Enjoy a hearty bowl of Clean Eating Halloween Chili or some flavorful Shredded Pork Tacos, grab a few cookies, your favorite Halloween movie and get ready for a very enjoyable evening. Happy Halloween everyone!
Last Minute Pumpkin Sugar Cookies
- ¼ cup coconut oil
- ¼ cup pumpkin puree, canned or cooked
- 1 cup organic sugar
- 1 egg
- ½ tsp. baking soda
- ¼ tsp. Real Salt
- 1 tsp. baking powder
- 1 Tbs. vanilla
- ¼ tsp. nutmeg (we like freshly grated)
- 1 tsp. cinnamon
- 1 tsp. cardamom
- 2-3 cups whole wheat flour
- ½ cup buttermilk
Cream coconut oil, pumpkin, sugar, egg, vanilla and buttermilk together. Add dry ingredients and mix, using enough flour to have a very soft yet not sticky dough. Chill for at least 4 hours. Roll out and cut into desired shapes. Bake on an un-greased cookie sheet at 350º until they are almost browned for a soft cookie. Frost and decorate with Buttercream Frosting and enjoy!
Melt butter in a saucepan. With a sturdy whisk, whisk in remaining ingredients and stir until smooth and creamy. Use enough milk or cream to reach your desired consistency. If you would like more of a yellow tint to the frosting just add ⅛ tsp. turmeric.
