Our mint plants have grown so big and beautiful this year! We have been creating all kinds of new recipes to use it in. These Mint Chocolate Ice Cream Sandwiches are some of our new favorites. Even with the healthy ingredients we had a neighbor say that she would buy them if they sold them in stores. Super encouraging right?!
Not only does mint taste amazing but it also is said to have healing properties such as soothing the digestive tract, helping to eliminate toxins, and curing asthma. It also whitens teeth and relieves bad breath, aches and pains and helps cleanse your blood.
Some other good things about these cookies are that they are made with honey instead of sugar and whole wheat flour. They taste great as cookies too.
Mint Chocolate Ice Cream Sandwiches
- 1 cup soft butter
- ¾ cup honey
- 2 eggs
- 2 ¼ cup whole wheat flour
- ¼ cup cacao
- 1 tsp. baking powder
- ½ tsp. Real Salt
- ½ – ¾ cup fresh mint, snipped
Combine butter, honey and eggs. Beat well. We like to use our KitchenAid for this. Add all remaining ingredients and beat well until combined. Roll into small balls, place on a cookie sheet and flatten with the palm of your hand. Bake at 350º until very lightly browned. Cool on a cooling rack. Place ice cream between two cookies and freeze until hard.
