It’s time for some delightful stuffing full of fall flavors like apples, fennel, walnuts, and sausage! At our house, the stuffing is almost more important than the turkey. We enjoy the sweet and savory taste of our Winter Squash Stuffing and thought it would be fun to take a slightly different approach. Success! The whole family loved it. Add this to some Cranberry Harvest Punch, Sweet Potato Casserole with Bacon and Blue Cheese and Roasted Beets with Goat Cheese and you are ready for a very healthy and divinely delicious Thanksgiving Feast!
For the sausage, you can use our Make Ahead Maple Sausage and we love to make our own bread cubes using our Easy Peasy Whole Wheat Bread. We just break the bread into pieces, place it on a plate covered with a dish towel or paper towel and leave them out to get dry. They keep very well in the freezer until you are ready for them.
Whole Wheat can have benefits such as aiding weight loss, lowering the risk of type 2 diabetes, lessening chronic inflammation and protecting against heart disease among other things. After our experience with a gluten free diet, we think it should totally be in the superfood category! (source)

Walnuts give this stuffing a wonderful crunch and have cardiovascular benefits, anti-cancer benefits and have anti-inflammatory nutrients. (source)
One tool that we love for recipes like this is our Deep Stainless Steel Steam Table Pan. This is truly a handy pan! It’s bigger than a cake pan and is very easy to cook in. We use it for recipes like our Zucchini Texas Sheet Cake and Homemade Cold Cereal. If you need to you could spread it out between two cake pans instead.

Apple Sausage Stuffing
- ½ lb. sausage
- 1 medium onion, diced
- 4-6 cloves garlic, diced
- ½ cup butter
- 10-15 mushrooms, diced
- 4-6 stalks celery, diced
- 3-4 apples, diced small
- 1-2 cups walnuts, roughly chopped
- 1 ½ tsp. fennel seed
- 1 Tbs. dried marjoram
- 1 Tbs. dried basil
- 6 cups bread cubes
- Real Salt and black pepper to taste
- 4 cups broth (more or less)
Cook sausage until almost done. Add onions and garlic and continue to cook until they sweat. Add butter, mushrooms and celery and cook until butter melts. Remove from heat. In a large stainless steel bowl, combine all ingredients except broth and mix well. Pour into a large stainless steel pan. Slowly pour broth over stuffing mixture. You may need to add more or less broth depending on how moist you like your stuffing. Just note that the apples do add some moisture during cooking. Bake at 375º until golden brown and crisp. This should take about 30-35 minutes.
