Everyone needs a guilt free treat now and then! This is one we have been making for years. We found the original recipe in a cook book forever ago and have tweaked it here and there to make it work better for us. We hope you like it!
Guilt Free Peanut Butter Cookies
- ¾ cup coconut oil
- ¾ cup butter
- 1 ½ cup honey
- 1/2 cup maple syrup
- 4 eggs
- 4 Tbs. vanilla
- 3 cups peanut butter
- 6 cups whole wheat flour (more if needed)
- 2 tsp. baking soda
- 1 tsp. salt
Combine all wet ingredients. Beat until smooth with a hand mixer. Add dry ingredients and mix until it becomes a soft dough. Bake at 350º for about 8ish minutes. You don’t want them to get too brown. Let cool slightly on cookie sheet before placing on a cooling rack. This keeps them from crumbling. This makes a large batch but the dough freezes very well.
For a chocolate peanut butter version add ½ cup of Cacao.
