Herbalishous Spring Hummus – A healthy spring snack or spread!
Nothing says “spring” quite like fresh herbs! The weather around here has been rainy for days and has finally turned to gorgeous sunshine. We have spring fever and this delicious Hummus really hits the spot! What’s better than fresh herbs and Hummus for a healthy snack or spread?

Hummus is very good for you. Chickpeas are full of fiber which gives energy and helps keep blood sugar levels stable. Chickpeas are also a source for iron and calcium. When you put a gorgeous veggie tray, some organic crackers or some sourdough bread with Hummus it’s easy to see that it’s a very healthy snack!

Tools for this Recipe:

Herbalishous Spring Hummus


4 cups cooked chickpeas – or here
½ cup olive oil
2 Tbs. lemon juice
1 tsp. Real Salt
¼ cup fresh basil
¼ cup fresh parsley
1 Tbs. fresh oregano
3 Tbs. fresh chives


Add all ingredients except olive oil to a food processor, Vitamix or Blendtec. Blend while drizzling in the olive oil until mixture is smooth. Enjoy with crackers, saltines, fresh veggies, sourdough bread or as a wrap spread!

Note: We have found that the best way to make your hummus creamy is to slightly overcook the chickpeas in a pressure cooker. Just add 3 cups of soaked chickpeas to a pressure cooker. Cover with water and cook 60-65 minutes. Let the pressure release naturally and let cool. Rinse if desired and they are ready to use!
