Easy Peasy Colcannon – A healthy and delicious option for St. Patrick’s Day with no artificial food coloring!

What is more appropriate for St. Patrick’s Day than cabbage and potatoes? Colcannon is packed with delicious flavor and is completely free of artificial colors and flavors!

When raising healthy kids it’s important to teach them about healthy foods. Artificial colors have been linked to a host of dangers including behavioral struggles. Holidays don’t have to be boring though! Just the act of having a fun, out of the ordinary meal will make the holiday special. They won’t even miss the fake green color. It can become a fun tradition that they look forward to much more than bright green cookies, cakes and treats.

Colcannon is one of the easiest recipes to make! We love to cook our potatoes in the pressure cooker which speeds things up even more (not to mention gives even more delicious flavor). Serve with a whole wheat Quick Roll and a Sourdough Cupcake and you have the perfect party meal!

Easy Peasy Colcannon

  • 8 oz. organic, nitrate free bacon (we use Applegate)
  • 1 small onion, diced
  • 1 head cabbage, sliced thin
  • 10-15 potatoes, cubed and boiled

Cut bacon into small pieces and fry in a deep fry pan (a deep pan helps make clean up easier). Remove bacon bits with a slotted spoon. Fry onion in the bacon grease until caramelized. Add cabbage and cook until wilted. Mash potatoes to your liking (we like to use raw milk and some butter). Serve by placing some potatoes on a plate, topping with cabbage and garnishing with bacon bits.
