Easy Peasy Egg Salad Sandwich – A quick, healthy and easy recipe. Perfect for leftover Easter eggs!

Easter is coming and lots of boiled eggs with it! Rather than let them go to waste why not whip up these insanely quick and easy Egg Salad sandwiches?

We love quick meals and this one might take the cake! Fresh, organic, pasture raised eggs are so healthy too. According to Dr. Axe, eggs are heart health, aid in weight loss, improve eye health and help maintain brain health!

Put this nutrition powerhouse with some whole wheat bread and you are good to go! Dr. William Sears likes to call whole grains “brain food.” Whole grains are healthy (or complex) carbs. They are absorbed from the intestine into the blood slower and allow steady energy and blood sugar levels. Put your eggs on some Un-Sour Sourdough Bread or Quick Rolls for the perfect healthy, quick and easy meal!

Easy Peasy Egg Salad Sandwich

Ingredients

6 boiled eggs
½ cup black olives, sliced
1-2 celery stalks, sliced
½ – ¾ cup mayonnaise
1 Tbs. mustard
1 tsp. dill (optional)
⅛ tsp. garlic powder
¼ tsp. onion powder
salt and pepper to taste

Directions

Mash or chop eggs and combine all ingredients. Serve on whole wheat bread.
