Stuffed Mushrooms

Stuffed Mushrooms. With either quinoa or rice! Super yummy and super tasty

We love so much of what Dr. Fuhrman advises about how to eat! We took much of it into consideration when we did our Word of Wisdom 30 Day Health Challenge and felt great! One of the foods he suggests is mushrooms. He says that they are anti cancerous. Who wouldn’t want to eat them now right?!

This recipe is to die for it’s so good! Not only do we have the healthy mushrooms but we’ve added rice or quinoa and spinach for extra nutrition. We also lowered the amount of dairy to make it easier on the digestive tract. They taste fantastic even without being smothered in cheese!

1 cup chopped spinach
2 cloves chopped garlic
1 small chopped onion
1 14oz. can artichoke hearts chopped
1 cup cooked rice or quinoa
¾ cup sour cream
¼ cup sliced olives
30-40 large whole mushrooms
2 Tbs. butter or water
salt and pepper to taste

Wash Mushrooms and remove stems saving for later. Place mushroom caps on a large cookie sheet. Sauté garlic and onions in butter or water until golden brown. Add spinach and chopped mushroom stems. Sauté until spinach wilts. Add rice or quinoa and sour cream. Stir and season with salt and pepper. Remove from heat and fill mushroom caps. Bake at 350º until mushrooms are tender.
