Whole Grain Spanakopita Balls. Fast and easy not to mention they taste great! Easy Peasy Life Matters

We whipped these fun balls up tonight for the first time and boy are they good! It’s a fantastic way to fit whole grains into your diet. We altered this recipe from one we found by Vegetarian Times. We wanted to add some more grains and change the flavor a little. If you don’t like rice you could try quinoa. Let us know how it turns out! 🙂

1 cup cooked millet
1 cup cooked brown rice
3 cups fresh spinach
¼ onion
½ cup feta cheese
¼ cup fresh basil
½ tsp. fresh ground nutmeg
2 eggs
salt and pepper to taste

In a food processor combine spinach, onion, feta, basil, nutmeg, eggs and salt and pepper. Blend until finely chopped. Add rice and millet and stir to combine. Using an ice cream scooper scoop onto a greased cookie sheet. Bake at 375º for about 25 minutes.
Serve with a side salad.
