Winter Panini

Winter Panini – Not only is it delicious but it also makes eating healthy in the winter easy peasy!
We are having a lot of fun coming up with winter friendly recipes! It can be very difficult finding fresh veggies in the winter. We’ve already shared Winter Pomegranate Salad and Cabbage Quinoa Winter Salad so we think it’s time for a sandwich.
Paninis are fun all year but seem to be perfect during the colder months. They are also a very quick and filling meal! Everyone at some point throws a grilled cheese sandwich together. By just adding a few minutes and all these glorious veggies you have a very fast, very satisfying and very healthy meal.
Onions, mushrooms and cabbage are all known for their cancer fighting properties along with many other benefits. Cabbage and apples also aid digestion. In addition to the fruit and veggies you can serve this on whole grain bread (for the picture we used some organic sourdough from Harmons). Tah dah! You have a complete meal that only took a few minutes.
Tools for this Recipe:
Winter Panini
2 Tbs. butter
¼ red onion, sliced thin
10 – 12 mushrooms, sliced thin
¼ head cabbage, sliced thin
salt and pepper to taste
brown mustard (optional)
1 Fuji apple
cheddar cheese
sandwich bread
Sauté onion and mushrooms in butter until they start to sweat. Add cabbage and continue to sauté until the cabbage turns a vibrant green. This should only take a few minutes since you want to leave the cabbage a little bit crisp. Assemble the sandwich by buttering a piece of bread and setting it on a warm panini grill or a skillet. Spread some brown mustard if desired then place some of the cabbage mixture, a couple slices of apple and the cheese on top. Spread mustard on another piece of bread and butter the top. Set on top of the sandwich with the butter side up. Close panini grill until bread is golden brown. If using a skillet flip when bottom side is golden.
