Broccoli Corn Chowder

What is more comforting than a big bowl of soup on a cold winter day? Now, we love our Clean and Comforting Chicken Chowder and our End of Winter Soup but there is something really special about this Broccoli Corn Chowder!

As a milk base it is filled with healthy fats. It’s creamy, dreamy and oh, so comforting! Add in the burst of sweetness from the corn and you have an exceptional bowl of soup. And the best part is that all the ingredients are pure! Put this with some Butter Bread and you are ready for a very healthy dinner.

½ cup butter
1 small onion, diced
4-5 cloves garlic, diced
4-6 potatoes, chopped
8 cups broccoli, chopped
2 cups fresh or frozen corn
2 cups cream
4-6 cups milk
16 oz. sour cream
½ cup flour
Real Salt and pepper to taste

In a large soup pan sauté onion and garlic in butter. Add potatoes and just enough milk to cover the potatoes. Cook until potatoes are almost tender. Watch and stir often so the milk doesn’t scorch. Add broccoli, cream and more milk in needed (you want the liquid to be about 2 inches above the broccoli). In a separate bowl combine flour and sour cream and mix well until there are no lumps. When the broccoli turns bright green and starts to get tender stir while adding sour cream and flour mixture. Add corn and stir until everything is well incorporated. Continue to heat until the soup warms back up. Add salt and pepper to taste.
