Summer Garden Salad (made two ways) – Perfect way to use up all those good garden veggies!

All the veggies are starting to come on in our garden! We crave this type of salad all year and it’s finally time to eat it! It’s super easy and fast to make. You have the basic base of garden fresh veggies and then two delicious dressing recipes to choose from. Both with great flavor and yummy herbs.

Veggie Salad Base

10 – 15 roma size tomatoes
2 cucumbers
2 cloves garlic
½ red onion
2 bell peppers (any color, we used chocolate)
Grate the garlic cloves and chop everything else into a salad bowl.

Dill Dressing

¼ cup olive oil
¼ cup red wine vinegar
½ tsp. salt
¼ tsp. black pepper
1 – 2 tsp. dill
parmesan cheese (as garnish)
Whisk together all ingredients except cheese and pour over veggie base. Mix well. Top with cheese.

Basil Dressing

¼ cup olive oil
¼ cup white balsamic vinegar
½ tsp. salt
¼ tsp. black pepper
1 cup fresh basil (chop after measuring)
feta cheese (as garnish)

Whisk all ingredients except cheese together and pour over veggie base. Mix well. Top with cheese.
