Last Minute Christmas Bark – Only 3 ingredients but a sure party pleaser!
It’s Christmas time, you’ve been gift shopping all day, the family is hungry and you have a party to bring a treat to in about an hour. You throw your head back and think “Now what!” Sound familiar? It sure sounds familiar to us! We have all been there. When you are in a bit of a jam like this it can be hard to make a healthy choice. However, when you have a 3 ingredient recipe that almost makes itself you have no more reason to fret. Having quick and healthy recipes (like an Olive Party Loaf, Party Fruit Bar and Chickpea Lettuce Boats) is a real lifesaver during the holidays!
Who doesn’t love chocolate? We most definitely do! One of the best things about this recipe (aside from the speed) is the salty flavor from the nuts. Salt + chocolate? Yum! If you use nuts without a lot of salt you might want to sprinkle a little kosher salt on top, just to make sure it’s as amazing as it can be. 😉 We used macadamia nuts and pistachios, however, cashews, pumpkin seeds and even some dried cranberries are amazing as well!
As always, it’s important to keep your ingredients clean. We like organic, fair trade, always making sure there is no soy lecithin. You can use either milk or dark chocolate chips as long as the ingredients are pure.
A couple final notes are that this recipe only makes a 8×8 pan so if you need more for your party you will need to double it. Also, if you need to speed up the time a little more you can put it in the freezer instead of the refrigerator to firm up.
Tools for This Recipe:
2 cups chocolate chips
1 Tbs. coconut oil
½ cup chopped nuts
Using a double boiler, melt the chocolate chips slowly. Add coconut oil and stir well. Pour into a buttered 8×8 pan and spread thin. Sprinkle the chopped nuts on top and chill until firm. When ready to serve gently take a butter knife and “break” into pieces. Keep refrigerated until ready to serve.
