Winter Pomegranate Salad
Winter Pomegranate Salad – A rich winter salad with flavor that will blow you away!
What is more festive than gorgeous pomegranates? We can only get them in the winter here so they are a real treat. With their lovely red color it really works out for the holiday season (like in some Christmas Chip Dip). This salad will be perfect as a Christmas dinner side dish or as a go-to winter salad. The dressing is rich and dramatic making it just right for the colder weather.
Aside from the delicious taste of pomegranate arils they also have a host of health benefits. Some of which include helping prevent heart disease, cancer, Alzheimer’s and cell damage. Fascinating isn’t it?! Another thing we love about this salad is that it is more filling than you would think. The rice, bacon, cheese, nuts and seeds really help it stay with you longer.
As a quick note, remember to keep your ingredients organic. Okay, now on to the recipe!
8 cups greens (mixed greens, kale, spinach, lettuce, etc.)
2 cups cooked rice
2 cups grated cheese (cheddar, Gouda or mozzarella)
1 cup nuts and/or seeds (cashews, pistachios, sunflower seeds, pumpkin seeds, etc.)
½ lb. bacon, cooked and crumbled
arils from 1 pomegranate
You can assemble your salad however you like. We have found this order to work well for us: greens, rice, cheese, nuts or seeds, bacon and pomegranate arils. Pour on your dressing and you are done!
1 cup olive oil
½ cup honey
½ cup balsamic vinegar
2 tsp. poppy seeds
1 Tbs. red onion, grated
¼ tsp. dry mustard
Put all ingredients in a quart Mason jar and shake well to combine.
