Sourdough Birthday Cupcakes

Sourdough Birthday Cupcakes – Deliciously moist and very easy to make! Low sugar and healthy for any Birthday!

Today is a very big day for us… It’s Easy Peasy Life Matter’s Birthday! We can’t believe that a year has already gone by since our Word of Wisdom 30 Day Health Challenge. We’ve learned so much and had such a good time sharing our recipes and lives with you 🙂 Thank you so much for all your support! We really couldn’t do what we do without all your support and kindness! It really makes our day when we hear that your enjoyed a recipe, learned something new or have been inspired in some way. Here’s to another wonderful year!

No birthday is complete without cake. It just wouldn’t be right! 😉 Cakes don’t have to be bad for you though. Using the right ingredients they can be every bit as tasty with no nasty side effects. These Sourdough Cupcakes are a prime example. We love using sourdough because of how deliciously moist it makes them! Now…. Let’s eat some cake!

Tools for this Recipe:

Sourdough Birthday Cupcakes

1 cup fresh and bubbly sourdough starter

1 cup buttermilk (milk works too)

¾ cup coconut oil

2 cups whole wheat flour

¾ cup honey

1 Tbs. vanilla extract

1 tsp. salt

1 ½ tsp. baking soda

⅓ cup cacao

2 eggs

Combine starter, buttermilk, coconut oil and flour in a large glass bowl. Cover and let sit 6-8 hours or overnight. Add all remaining ingredients and mix with an electric mixer. Using an ice cream scoop divide between 18 paper lined muffin tins. Bake at 350º for 20-25 minutes or until a toothpick comes out clean. Frost with our Chocolate Butter Cream Frosting!

Chocolate Butter Cream Frosting

  • ⅓ cup butter, melted
  • 2 Tbs. cacao
  • 1 Tbs. vanilla
  • 3 cups powdered sugar (make sure it is organic to avoid nasty GMOs)
  • enough milk to thin

Stir cacao into melted butter until well incorporated. Stir in remaining ingredients until you reach your desired consistency. We just use a whisk. Frost by spreading on or cut the tip off the corner of a plastic bread or sandwich bag and squeeze it through the hole to decorate.
