Sourdough Carrot Cake Bunnies – A healthy Easter treat that is fun to make and fun to eat!

Easter is almost upon us! Time for last minute planning on those healthy treats and baskets. We’ve already shared our Easy Soft and Gooey Granola Bars and our Easter Basket for Healthy Kids. Today we have one of the ultimate healthy treats! And it also happens to be simply adorable.

If you have never tried sourdough cakes before you are really missing out. As we mentioned in our Birthday Cupcakes, sourdough cakes are incredibly moist and delicious! Add the fun of carrots and a cute bunny shape and you have a healthy treat that will delight the kiddos!

It’s made completely without artificial colors or flavors. Not only are the carrots cute for the holiday but they also add good fiber. Sourdough itself has a host of benefits and we always use whole wheat. There is a little bit of powdered sugar in the frosting so make sure you buy organic. The vanilla turns the frosting a slightly brown color for a fun brown bunny! Kids will have fun making these and a blast eating them!

Sourdough Carrot Cake Bunnies

1 cup fresh, bubbly sourdough starter

2 cups whole wheat flour

1 cup applesauce

½ cup buttermilk

1 cup coconut oil

1 cup honey

3 eggs

2 cups grated carrots

1 cup chopped nuts

1 Tbs. vanilla

1-2 tsp. cinnamon

¾ tsp. salt

1 tsp. baking soda

Combine starter, flour, applesauce and butter milk in a glass bowl. Mix well. This will be somewhat thick. Cover and let sit on the counter for 6-8 hours or overnight. Beat in all remaining ingredients until well combined. Pour into a greased sheet pan with high edges. Bake at 350° for 30-35 minutes or until a toothpick comes out clean. Let cool before frosting.

Cream Cheese Frosting

¼ cup butter

3 oz. Cream cheese

1 Tbs. Vanilla

4-5 cups powdered sugar

milk to thin

dash of salt

Melt butter. Stir in cream cheese until also melted and well mixed with the butter. Whisk in remaining ingredients using enough milk for desired consistency.
