Vegetarian Lime Fajitas

Vegetarian Lime Fajitas – Meatless Fajitas that are full of flavor and easy to make!

Vegetarian meals are some of our favorites! Don’t get us wrong, we enjoy meat too (what better way to get those lovely B12 vitamins, right?) but there is just something wonderful about a meal packed with good veggies!

If you have been following us for any length of time you know how much we love Mexican Food! It’s pretty much a staple around here. Roasted Pepper Rellenos, Homemade Tortillas, Mexican Lettuce Wraps, Veggie Barbecue Tacos, we really love it all!

These Vegetarian Lime Fajitas are very easy to make and taste absolutely amazing! Put them with some Cilantro Lime Rice (recipe below) and some Homemade Refried Beans and you have a healthy meal the whole family will love!

Resources for these Recipes:

Veggie Sauce

  • 1 cup lime juice
  • ½ cup olive or avocado oil
  • ¼ cup Bragg’s Liquid Aminos or Coconut Aminos
  • ½ cup honey, scant
  • ½ cup fresh cilantro
  • 2 garlic cloves, grated
  • Whisk together all ingredients until well combined.
  • Fajitas
  • yellow squash
  • mushrooms
  • bell peppers, any color
  • scallions
  • 2 Tbs. butter
  • whole wheat taco shells
  • sour cream
  • avocados
  • cheese

Melt butter in a large fry pan. Add all veggies except scallions and avocados. Stir and fry until the veggies begin to be tender, we like ours more on the crisp side. Add scallions and Veggie Sauce. Heat until warmed through. Assemble Fajita by filling a taco shell with Cilantro Lime Rice (recipe below), Homemade Refried Beans and veggies. Top with sour cream, cheese and avocados.

Cilantro Lime Rice

2 cups rice, we use pink, forbidden or brown

4 cups water

½ cup lime juice

½ cup cilantro

Combine all ingredients in a pan. Bring to a boil, reduce heat and simmer until the water is absorbed and the rice is tender.

    I can’t tell you how many times I’ve bough Liquid Aminos and forgot about them. Veggie Fajitas look amazing. I’m going to add them to my menu.
